There are two things that are used as spice: a weed called dill weed and a seed called dill seed. The plant has flavor and aroma and can be used in salads, eggs, and marinades.

What to do with dill

There is a lot of good recipes for dill, one of which is the potato salad. It’s similar to grandma’s: it’s bursting with fresh herbs, and has olive oil and vinegar in it. Think: potatoes drenched in a creamy sauce made with olive oil and balsamic vinaigrette, along with fresh herbs and seasonings, to round it out.
If you want to season fish with bold flavours, dill can be used. It can be used to flavour weak tasting food, like eggs. Adding a little depth to your omelette by adding some dill helps to bring out the egg flavour.
Due to it’s anti-bacteria and anti-bad breath properties, dill is used in traditional herbal medicine to lower cholesterol and blood sugar. A newer research shows that dill may help improve cholesterol and blood sugar control, as well as some other purported benefits. Some of the research done to date doesn’t translate to the benefits people get when they eat freshly picked dill. It’s mostly based on studies using extracts and essential oils of dill seed and leaf. Most of the time it’s been conducted in animal models with very high doses of dill. The hamsters were fed the equivalent of 1.5 cups of fresh dill per day, as part of a study that looked at the relationship between depression and diabetes.
It’s best to freeze the dill for six months to a year if it’s dry of surface water. If it’s wet, place the chopped dill in freezer containers and let it dry for an hour or so. This will make sure that it doesn’t freeze in a lump.

Freezing dill for pickling?

Yes, you are able to freeze it. For a minimum of 6 months, the pickles can be frozen. If you have frozen them for at least a year, you should be able to eat them. The quality of them may degrade after a few months in the freezer.

Eating raw dill?

For consumption, dril is generally safe. It can cause allergic reactions, nausea, vomiting, and an itchy mouth in rare cases.

Freezing fresh dill?

Cut the plant’s lower stalks with a knife. The fronds, stems, and lower stalks of your dill weed can be seen when you take a close look. The frilly tips on the edge of the dill plant help to identify the fronds. The branched stems can be seen attached to the fronds, and the thicker stalks can be seen at the bottom of the plant. You won’t be using this portion of the stalks in future recipes if you slice it off with a knife. There’s no point in freezing it because the lower stalks aren’t even worth eating.
For at least 6 months, dyll can be frozen. You can either freeze the dill on its own or freeze it in ice cubes with herbs, which can be used in a variety of dishes.
